Day 27: Coconut Chana Saag from Isa Does It

Isa Does It again! This creamy chickpea curry is another hit from Isa Chandra Moskowitz. It’s kind of a cross between chana masala and a Thai curry - spicy tomato and chickpea curry along with coconut milk and lime juice. The recipe calls for canned whole tomatoes, but I only had fresh cherry tomatoes and they worked out really well. I also had to skip the fennel seed, but I’m definitely going to pick some up for next time since I’ve heard it’s great for digestion.

And do you know what I loved about this dish even more than the flavor? I only had to use one pot, and maybe 3 measuring spoons at the most, and it came together in under 30 minutes.
