Day 28: Avocado and Sun-Dried Tomato Panini from Chloe's Vegan Italian Kitchen

I don’t have a panini press and I probably never will, plus I used regular white bread, so I guess this isn’t technically a panino. (I learned from Chloe’s book that the singular of panini is panino.) People who have a panini press - do you use it regularly? Or is it one of those appliances you bought on a whim and pull out of the basement every 2 years like my food dehydrator? I was really passionate about dried apples for like 5 seconds, and now my poor dehydrator is wasting away in my mom’s basement.

Speaking of dried fruits, if you like sun-dried tomatoes, boy is this the book for you! Some of my favorite recipes in Chloe’s Vegan Italian Kitchen include Sun-Dried Tomato Penne, Kate Middleton’s Cauliflower Alfredo, and Wild Mushroom Rigatoni, to all of which I add extra sun-dried tomatoes. This panino was delicious, with balsamic vinegar drizzled (or in my case, plopped with absolutely no finesse) onto the bread, grilled in olive oil, and filled with avocado, sun-dried tomato of course, and baby spinach. There aren’t many measurements in the recipe, so you could easily throw this together with however much of the ingredients that you want. I feel like I eat a lot of spinach and tomatoes and tend to gravitate towards recipes that include them, which is fine I suppose, but maybe I should branch out and try a recipe that sounds totally out of my comfort zone…
